The paragraph style field is auto-completing, so you can type the hot key, the first few characters of the new style name (usually one or two is enough to make the choice unambiguous), and then Return to apply the new style.
Pressing the style sheet editor's "hot key" leaves you editing the current paragraph's style sheet, so you can type a few tabs to get to the desired setting, change the value, and then type a return to save the style sheet instantly, updating all uses of the style in the document.
Xstyle was also designed with the beginner and the mouse user in mind: many of the editable fields (style names, font names, character sizes, colours, shades, horizontal/vertical scales, etc.) in both palettes have corresponding pop-up menus that let you make your changes with one click of the mouse.
